1. Setup
Cut the green onions into long sections, then slice lengthwise very thinly. Place in a bowl of cold water to make green onion curls. On a separate cutting board, take the tail off the shrimps and cut them into 2 or 3 pieces.
2. Coat the shrimp
In a bowl, mix the pieces of shrimp with the cornstarch, season with salt and pepper.
3. Cook the shrimp
In a deep pan, add a generous drizzle of vegetable oil. Once the oil is hot, cook the shrimps, only a few at a time, 2-3 minutes. Remove and place on paper towels.
4. Steam the buns
In a steamer, cook the bao buns for 3-4 minutes or until warm and soft. If you don't have a steamer, put them in a strainer over a pot of boiling water and cover. The buns should not touch the water. Put parchment paper so that the buns don't stick.
5. Make the sauce
In a bowl, combine the spicy mayonnaise with the honey.
6. Plate your dish
Serve the crispy shrimp in the steamed buns. Garnish with the sauce, the green onions and the sesame seeds. Bon appétit!
