Crispy Salmon Bites
over soba noodles with edamames, carrot, cucumber and a sweet & spicy mayonnaise

1. Setup
Peel and cut the carrot into thin sticks or grate it. Cut the cucumber into half moons. Thinly slice the radish and green onion. Cut the lime into quarters. Cut the salmon into cubes.
2. Bread the salmon
Place the salmon cubes in a bowl with 1 2P | 2 3P tbsp. of the sauce mix. Season with salt and pepper. Place the panko mixture in another bowl. Coat the salmon cubes with the panko.
3. Cook the noodles
Bring a pot of water to a boil. Cook the noodles and edamame 4-5 minutes until tender. Drain. Mix with a drizzle of oil and the soy sauce. Set aside.
4. Cook the salmon
Heat a drizzle of oil in a pan over medium-high heat. Add the salmon cubes and cook for about 1-2 minutes on each side until each surface is colored.
5. Plate your dish
Serve the noodles and vegetables in a bowl and garnish with the salmon cubes, sauce and green onions. Add lime juice to taste. Bon appétit!
