Crispy Oyster Mushroom Submarines
with tomato, lettuce, pickle and thousand-island sauce

1. Setup
Very thinly slice the lettuce. Slice the tomato, then cut it into half slices. Cut the mushrooms into pieces. Slice the pickle.
2. Bread the mushrooms
Put the cornmeal in a bowl with the spices, salt and pepper. In another bowl, whisk the yogurt with 1/3 2P | 1/2 3P cup of water. Dip the mushrooms in the yogurt then coat with the cornmeal.
3. Cook the mushrooms
Fill the bottom of a saucepan with vegetable oil and warm it up over medium-high heat. When the oil is hot, add the mushrooms to the pan and cook 2-3 minutes on each side or until browned. Reduce the heat if the oil smokes. Place the mushrooms on a paper towel.
4. Plate your dish
Heat the buns, to taste. Garnish the buns with the sauce, the mushrooms, the lettuce, the tomato slices and the pickles. Bon appétit!
