1. Prepare Ingredients
Turn oven on to 375°F with a rack in the centre. Slice cucumber into 1/4 inch rounds. Slice tomato into 1/4 inch rounds, and season to taste with salt and pepper.
2. Prepare Chicken
Drain and pat dry chicken breast with paper towel. Cut into 1 inch strips widthwise. Season well with salt and pepper. In a large bowl, combine egg whites and chicken. Add flour blend, 3/4 tsp. salt and cornstarch to chicken and toss to coat each piece of chicken thoroughly. Wash hands with hot, soapy water.
3. Cook Chicken
Heat 3 tbsp. oil in a large skillet over medium-high. Once hot, add chicken and cook for 1–2 minutes per side until turning golden and crispy. Reduce heat to medium and cook 4–6 minutes flipping often to prevent burning, or until chicken is an internal temperature of 165°F.
4. Toast Buns
Meanwhile, cut buns in half and place in oven insides up, directly on the centre rack. Toast buns for 4–7 minutes, or until golden and crispy.
5. Prepare Salad
Meanwhile, in a medium bowl, whisk together 1 tbsp. olive oil and balsamic vinegar to taste. Peel shallot and trim ends. Cut shallot in 1/8 inch slices. Mix in shallot, cucumber and 2/3 of the spinach. Season to taste with salt and pepper.
6. Assemble and Serve
Spread asiago ranch on both sides of buns. Divide tomatoes and remaining spinach between bottom buns. Top with chicken and drizzle buffalo sauce over top to taste. Close sandwiches and place on serving plates with a side of salad. Enjoy!
