Creamy Blue Cheese Gnocchis

with spinach, leek, walnuts and mozzarella

1. Setup Set the oven to Broil. Bring a large pot of salted water to a boil. Thinly slice the leek and chop the walnuts.
2. Cook the gnocchis Add the gnocchis to the boiling water. Cook for 3 minutes or until they float to the surface then drain.
3. Cook the leek and the spinach Melt a knob of butter in an oven safe pan over medium heat. Add the spinach and the leek. Cook for 2-3 minutes until tender.
4. Make the sauce Add the cream and the blue cheese. Cook for 2 minutes until the cheese is melted. We often think blue cheese is too strong for kids, but surprisingly, they usually like it since it's a creamy cheese. You can introduce some gradually. Add the gnocchis and the walnuts. Add salt and pepper.
5. Plate your dish Add the mozzarella and cook in the oven for 2-3 minutes and serve. Bon appétit!
