Club Sandwich Chicken Salad

with cheddar, tomato, bacon bits and lemon mayonnaise

1. Setup Cut the tomato into cubes. Cut the bread and the cheddar into cubes. You can also grate the cheddar if you prefer. Chop the shallot. Thinly slice the lettuce. Cut the lemon in 2.
2. Cook the chicken Heat a drizzle of oil in a pan or on a grill over medium-high heat. Season the chicken with salt and pepper. Add the chicken to the pan and cook 3-4 minutes on one side. Flip, cover and cook 7-9 minutes until center is cooked through.
3. Cook the bread Heat a drizzle of oil and 1 tbsp. of butter in a small skillet over medium-high heat. Cook the bread pieces for about 1 minute on each side or until browned.
4. Prepare the sauce In a bowl, mix the mayonnaise with the juice of half a lemon and the shallot to taste.
5. Plate your dish Slice the chicken. Top the lettuce with all the ingredients and the sauce. Bon appétit!
