1. Cook the chicken
Cut the chicken breasts into 3-4 pieces. Place in a saucepan with enough water to cover. Add salt and pepper. Bring to a boil and cook for 10-12 minutes. Drain, let cool then chop very finely.
2. Setup
Chop the parsley and the ham very finely.
3. Make the salads
Mash the eggs in a bowl. Place the chopped chicken in a 2nd bowl and the ham in a 3rd bowl. Split the parsley in half and add to the bowl with the eggs and the one with chicken. Divide the mayonnaise in 3 for each bowl. Add the Dijon mustard to the ham. Season the 3 mixtures with salt and pepper.
4. Assemble the sandwich
Top 1 slice of bread with each mixture then layer them. (For the 4 portions, make 2 sandwich breads.) Put the boston lettuce in the layer with the eggs.
5. Plate your dish
Heat 0.5 2P | 0.5 3P of the cheese for about 1 minute in the microwave. Pour the cheese over the sandwich and serve. Bon appétit!
