1. Setup
Preheat the oven to 400F. Thinly slice the radish. Seperate the lettuce leaves or thinly slice.
2. Make the bechamel
In a small pot, melt 2 tbsp of butter over medium heat. When the butter is foamy, add the flour and whisk to make a roux. Cook 1-2 minutes. Add the milk and the Dijon mustard, whisking until the sauce thickens. Add salt and pepper to taste.
3. Cook the croque-madame
Place the slices of bread on a baking sheet lined with baking paper. Spread some béchamel on 2 2P | 3 3P slices of bread, add some cheese and the ham. Add the other slices of bread on top and garnish with the rest of béchamel and cheddar. Bake in the oven for about 8-10 minutes until the cheese is melted. Broil 2-3 minutes if desired.
4. Cook the eggs
Meanwhile, heat a drizzle of oil in a pan over medium heat. Crack the eggs and cook sunny side up for 3-4 minutes or until desired doneness. Season with salt and pepper. Meanwhile, mix the lettuce with the radish, a drizzle of oil, a bit of Balsamic vinegar if desired, salt and pepper.
5. Plate the dish
Place the egg on top of the croque-madame. Serve with the salad. Bon appétit!
