1. Setup
Preheat the oven to 425°F. Chop the garlic, the cilantro and the parsley. Cur the lime in half. Cut the potatoes and the onions into quarters. Cut the pepper and the zucchini into sticks.
2. Cook the vegetables
Spread the vegetables on a baking sheet. Brush with olive oil and season with salt and pepper. Bake for 25-30 minutes.
3. Make the sauce
In a bowl, combine the parsley, the cilantro, the dried oregano, the garlic, the lime juice and a drizzle of olive oil.
4. Cook the chicken
Brush the chicken drumsticks with about 1 tbsp of the chimichurri sauce. Add a drizzle of olive oil and season with salt and pepper. Bake 18-20 minutes.
5. Plate your dish
Serve the grilled vegetables with the chicken drumsticks. Garnish with the crumbled feta and the rest of the chimichurri sauce. Bon appetit!
