1. Cook Fries
Turn oven on to 425°F and line a baking sheet with baking paper. Peel sweet potato if desired and cut into 3/4 inch thick fries. In a large bowl, combine fries, cornstarch spice mix, 1 tbsp. oil. Season to taste with salt and pepper. Transfer to oven and set a timer for 24–28 minutes, or until crisp and golden .
2. Prepare Ingredients
Slice tomatoes into 1/4 inch slices. Remove lettuce leaves from stem and roughly chop.
3. Cook Chicken
Heat 1 tbsp. oil in a large non-stick skillet over medium-high. Once hot, add chicken strips and spice blend for 5–7 minutes, or until browned and chicken reaches an internal temperature of 165°F. Season to taste with salt and pepper.
4. Prepare Bacon Mayo
In a small bowl, combine mayonnaise and half of the bacon.
5. Assemble + Serve
Spread a dollop of mayonnaise in the center of each tortilla. Top with half of the lettuce, tomato and chicken. Roll tortillas. Prepare a salad with the remaining: lettuce, tomato and bacon. Serve with fries, salad and the remaining mayonnaise on the side. Enjoy!
