Chicken Caesar Salad

with croutons, parmesan and lemon

1. Setup Preheat the oven to 400°F. Cut the ciabatta bread into thin slices. Chop the garlic. Cut the lemon into quarters.
2. Cook the chicken Pat the chicken dry then season with salt and pepper. Heat a drizzle of oil in a skillet over medium-high heat. Cook the chicken 4-5 minutes on one side. Flip, cover and cook 6-8 minutes over low heat until the center of the chicken is cooked through. You can also cook the chicken on the grill with the same instructions.
3. Cook the croutons Place the slices of bread on a baking sheet lined with baking paper. Add a drizzle of oil and a pinch of salt. Bake in the oven for 8-10 minutes until colored.
4. Make the sauce In a bowl, mix the sauce with the garlic, the anchovy paste to taste, half the parmesan and the juice of half a lemon. Generously season with pepper. Add 1-2 tbsp. of water for a more runny sauce.
5. Plate your dish Break up the lettuce and put it in a bowl with the sauce. Mix together. Serve and garnish with chicken slices, croutons, remaining parmesan and lemon juice to taste. It is possible to leave everything in the center of the table like a salad bar and let everyone help themselves. Bon appétit!
