1. Prepare Ingredients
Cut ciabatta buns in half. Pick and chop parsley. Cut the onion in 1/2 inch pieces. Chop garlic.
2. Prepare Meatballs
In a large bowl, combine chorizo, panko and two-thirds of the grana padano. With clean hands, mix well and form eight 1½ inch firm meatballs. Wash hands with hot, soapy water.
3. Cook Meatballs
Heat 1 tbsp. olive oil in a medium oven-proof skillet over medium-high. Once hot, add meatballs and cook for 3–4 minutes, turning as needed, until golden. Remove and set meatballs aside on a plate.
4. Cook Sauce
Heat the same skillet over medium. Add onion and cook for 2 minutes until tender.Add tomato paste, herb blend and half of the garlic and cook for 30 seconds, until fragrant. Add tomato blend, 1/2 cup water and meatballs. Cook for 4–6 minutes, until slightly reduced and meatballs reach an internal temperature of 160°F. Taste and adjust seasoning with salt, pepper and red pepper flakes.
5. Prepare Garlic Bread and Salad
Turn broiler on to 500°F with a rack in the centre and one 6 inches from the top. Meanwhile, line baking sheet with foil. Spread 1 tbsp. butter and remaining garlic on cut side of buns. Add buns onto baking sheet. In a second large bowl, whisk together 1 tbsp. olive oil and dressing base. Season to taste with salt and pepper. Toss in spring mix and remaining grana padano.
6. Finish and Serve
Sprinkle mozzarella cheese evenly over skillet and transfer to top rack. Transfer buns to centre rack. Broil both for 2–5 minutes, until cheese is golden and buns are toasted. Monitor closely to prevent burning. Cut garlic bread into triangles. Divide meatballs into serving bowls and garnish with parsley. Serve with garlic bread and salad on the side. Enjoy!
