Cheese, Jalapeño and Chicken Burger

with gucacamole, fries and chipotle mayonnaise

1. Setup Caution hot pepper! In case of sensitive skin, use gloves to handle the ingredient. Remove the seeds for a milder taste. Preheat the oven to 425°F. Chop the jalapeño. Zest the lime and cut it in half. Chop the cilantro. Cut the potatoes into sticks.
2. Make the fries Spread the potatoes on a baking sheet. Drizzle with olive oil, season with salt and pepper. Cook in the oven for 30-35 minutes.
3. Make the chicken mixture In a bowl, mix the ground chicken with the cilantro and the jalapeños. Season with salt and pepper.
4. Cook the chicken patties In a pan, add a drizzle of olive oil. Oil your hands and form 1 big patty per person with the ground chicken mixture. Cook for 5-6 minutes on each side. Add the cheese, lower the heat and cover. Cook for 1-2 minutes or until the cheese has melted and the chicken is cooked.
5. Make the sauce In a bowl, mix the mayonnaise with the lime zest, the juice of half a lime and the chipotle powder.
6. Plate your dish Toast the buns, if desired. Assemble the burgers with the chicken patties, the guacamole and the sauce. Serve with the fries and the rest of the sauce. Bon appétit!
