Cheddar and Pickle Hot Dog

with jalapeño pepper and coleslaw

1. Cook the sausages Warm up a drizzle of oil in a pan over medium-high heat. When the pan is hot, add the sausages and reduce the heat to medium-low. Cover and cook for 7-9 minutes on each side or until the center is cooked. Preheat the grill to medium high heat. Oil the grate. Grill the sausages for about 10-15 minutes.
2. Setup Grate the carrot. Cut the cucumber into very thin strips. Thinly slice the pickle and jalapeño pepper. Wash your hands after handling the jalapeño pepper.
3. Make the salad In a bowl, mix the cabbage with the carrot, the cucumber, a drizzle of oil, 1-2 tbsp. of cider vinegar, some salt and some pepper.
4. Make the cheese sauce Warm up 1 2P | 2 3P tbsp. of butter in a saucepan over medium-high heat. When the butter is foaming, add 1 2P | 2 3P tbsp. of flour and mix. Cook for about 1 minute. Add 1/4 2P | 1/3 3P cup of milk and 1/4 2P | 1/3 3P cup of water to the saucepan. Whisk well to make a smooth sauce. Add the cheese and the spices (to taste) and mix. Leave on low heat so that the sauce will remain liquid.
5. Plate your dish Warm up the buns to taste. Garnish with the sausage, the cheese sauce, the pickle and jalapeño pepper slices (to taste). Serve with the coleslaw. Bon appétit!
