1. Setup
Preheat the oven to 425° F. Peel onion and garlic and trim ends. Slice the onions in 1/4 inch pieces.. Chop the garlic and the basil. Cut the tomatoes in half. Grate the cheese.
2. Make the caramelized onions
In a pan over medium heat, add a drizzle of olive oil. Add the onions and 1 tbsp of sugar. Season with salt and pepper. Cover and cook 8-10 minutes. Once the onions are caramelized, add the garlic, the spinach and the basil. Mix well.
3. Roll out he pizza dough
On a floured work surface. Roll out the pizza dough to make a large pizza or smaller individual pizzas.
4. Assemble and cook in the oven
Spread the pizza dough on a baking sheet. Garnish with the marinara sauce, the cheese, the onions and the cherry tomatoes. Bake for 12-15 minutes.
5. Plate your dish
Serve the pizza. Bon appetit!
