1. Setup
Slice the mushrooms and the onions. Roughly chop the walnuts. Chop the garlic and the parsley.
2. Make the caramelized onions
In a pan over medium heat, add a drizzle of olive oil. Add the onions and 1 tbsp of sugar. Salt and pepper. Cover and cook for 8-10 minutes. Once the onions are caramelized, add the garlic and the mushrooms. Cook for another 4-5 minutes. At the end, add the parsley. Mix well, season with salt and pepper.
3. Make the crêpe mixture
In a bowl, mix the eggs with the milk. Mix well and gradually add the flour. Season with salt and pepper.
4. Cook the crêpes
In a pan over medium heat, add a tbsp of butter. Add some of the crêpe mixture to make a thin layer in the pan. Cook the crêpes 1-2 minutes on each side.
5. Make the sauce
In a small pot, combine the goat cheese and the cream. Mix well and heat up for 2-3 minutes or until a smooth sauce forms.
6. Plate your dish
Garnish the crêpes with the onion and mushroom mixture. Fold. Garnish with the goat cheese sauce, the arugulaand the walnuts. Bon appétit!
