Caprese Mac and Cheese

with zucchini, tomato and basil

1. Cook the macaroni Preheat the oven to 375°F. Bring a pot of salted water to a boil. Cook the macaroni for 6-8 minutes until tender. Drain.
2. Setup Grate the zucchini. Cut one tomato into slices and the other one into cubes. Thinly slice the bocconcini and the basil.
3. Cook the vegetables Heat a knob of butter in an oven-proof pan over medium-high heat. Add the zucchini and diced tomatoes and cook for 3 minutes. Season with salt and pepper.
4. Make the sauce Add the spice mix, stir and cook for 1 minute. Add the milk and mix until smooth. Add the cheese and stir until melted. Season with salt and pepper.
5. Add the pasta Add the macaroni and mix. Add the slices of tomato and bocconcini on top. Cook in the oven for 15-18 minutes. Add salt and pepper to taste.
6. Plate your dish Serve and garnish with the basil. Place everything in the center of the table and let everyone make their own plate, skipping the basil if they wish. Bon appétit!
