1. Cook the potatoes
Preheat the oven to 400°F. Cut the potatoes into cubes. Put in a pot and fill with enough water to cover. Bring to a boil. Cook for 6-7 minutes. Drain and let dry.
2. Setup
Cut the zucchini into slices. Cut the onion into pieces. Zest the lemon. Seperate the lettuce leaves. Cut the chicken into cubes.
3. Make the skewers
Place the chicken in a bowl with the zucchini, onion, 3/4 of the spices, a drizzle of oil, salt and pepper. Thread the vegetables and chicken onto the skewers. Place the skewers on a baking sheet. Bake in the oven for 16-18 minutes.
4. Cook the potatoes
Heat a generous drizzle of oil in a pan over high heat. Cook the potatoes 6-8 minutes until browned. Add the lemon zest and the juice of half a lemon. Add salt and pepper.
5. Make the sauce
Mix the mayonnaise with the remaining spices and the juice of half a lemon. Add 2-3 tbsp of water to taste.
6. Plate your dish
Serve the skewers with the lettuce, the sauce and the potatoes. Bon appétit!
