1. Bake the fries
Preheat the oven to 425°F. Cut the sweet potatoes into fries. Place on a baking sheet lined with baking paper. Add a drizzle of oil, half of the spices, salt and pepper. Bake in the oven for 24-28 minutes until colored.
2. Setup
Thinly slice the shallot. Cut the tomato into small cubes.
3. Pickle the shallot
Put the shallot in a bowl. Add 1/3 cup of water, ¼ cup of cider or wine vinegar, a pinch of salt and 1 tbsp. of sugar in a small saucepan. Bring to a boil. Pour over the shallot and leave to marinate.
4. Make the patties
In a bowl, put the ground chicken with half of the spices, salt and pepper. Mix. Make 1 patty per person. Heat a drizzle of oil in a skillet over medium-high heat. Cook the patties 3-4 minutes on each side until browned and the center is cooked through.
5. Plate your dish
Mix the spinach with a drizzle of oil, salt and pepper. Serve the sweet potato fries with the chicken patties, spinach, shallot, tomato, cheddar cheese, guacamole and sour cream.
