1. Bake the fries Preheat the oven to 425°F. Cut the sweet potatoes into fries. Place on a baking sheet lined with baking paper. Add a drizzle of oil, half of the spices, salt and pepper. Bake in the oven for 24-28 minutes until colored.
2. Setup Thinly slice the shallot. Cut the tomato into small cubes.
3. Pickle the shallot Put the shallot in a bowl. Add 1/3 cup of water, ¼ cup of cider or wine vinegar, a pinch of salt and 1 tbsp. of sugar in a small saucepan. Bring to a boil. Pour over the shallot and leave to marinate.
4. Make the patties In a bowl, put the ground chicken with half of the spices, salt and pepper. Mix. Make 1 patty per person. Heat a drizzle of oil in a skillet over medium-high heat. Cook the patties 3-4 minutes on each side until browned and the center is cooked through.
5. Plate your dish Mix the spinach with a drizzle of oil, salt and pepper. Serve the sweet potato fries with the chicken patties, spinach, shallot, tomato, cheddar cheese, guacamole and sour cream. It is possible to leave everything in the center of the table like a salad bar and let everyone help themselves. Bon appétit!
