Broccoli and Zucchini Vegetarian Curry
with edamame, coconut milk broth, orzo and fresh herbs

1. Setup
Dice the zucchini. Cut the broccoli into florets. Chop the basil and cilantro.
2. Cook the zucchini
In a large skillet, on medium-high heat, add a drizzle of oil. Cook the zucchini with the curry paste, the curry powder and the cumin powder 4-5 minutes.
3. Cook the orzo
Bring a pot of salted water to a boil. Add the orzo. Cook for 6-8 minutes. Drain.
4. Add the rest of the ingredients
In the pan with the zucchini, add the broccoli, edamames, coconut milk, the broth cube and 1 2P | 1.5 3P cup of water. Bring to a boil. Reduce the heat to medium low and simmer for 5-7 minutes.
5. Add the orzo
Add the cooked orzo to the curry. Mix. Adjust salt and pepper to taste.
6. Plate your dish
Serve the curry and garnish with the chopped cilantro and basil. Bon appetit!
