with eggs, bacon and cheddar cheese

1. Setup Chop the green onions and the pickled jalapeños. Dice the mini peppers. On a separate board, cut the bacon into pieces.
2. Cook the bacon In a pan over medium-high heat, add the bacon. Cook for 5-6 minutes or until the bacon is crispy. Remove and place on paper towels.
3. Cook the eggs In the same pan, remove most of the bacon's fat. Add the peppers. Cook for 3-4 minutes. Lower the heat and then add the eggs. Cook for 2-3 minutes while stirring. Put the bacon pieces back and mix well.
4. Assemble Put some of the egg mixture on one side of the tortilla. Garnish with the cheese and the pickled jalapeños. It is possible to make a portion without the pickled jalapeños for the children's portion . Close the tortilla in half on itself.
5. Cook the quesadillas In a pan over medium-high heat, add a drizzle of olive oil. Cook the quesadillas 3-4 minutes on each side.
6. Plate your dish Garnish the quesadillas with the sour cream and the green onions. Bon appétit!
