1. Cook the potatoes
Preheat the oven to 425°F. Cut the potatoes into wedges. Place on a baking sheet lined with baking paper. Add a drizzle of oil, salt and pepper. Mix. Bake in the oven for 28-34 minutes until browned.
2. Setup
Thinly slice the green onion. Crumble the blue cheese. Thinly slice the onion. Cut the cob of corn in half. Bring a pot of water to a boil. Add the corn and cook for 6-8 minutes. Drain.
3. Cook the onion
Heat a drizzle of oil in a skillet over medium-high heat. Add the onion, 1 tbsp. of sugar and a pinch of salt. Cook 2-3 minutes. Reduce the heat to low, cover and cook for 8-10 minutes. Add a dash of wine or balsamic vinegar to taste.
4. Cook the beef
Form 1 patty per person with the ground beef. Season with salt and pepper. Heat a drizzle of oil in another pan on medium-high. Cook the patties 4-6 minutes on each side or until desired doneness.
5. Prepare the sauce
In a bowl, combine the sauce with the crumbled blue cheese, green onion to taste and 1 tbsp. of water. Adjust seasoning to taste.
6. Plate your dish
Heat the buns 1-2 minutes in the oven if desired. Garnish with the arugula, the sauce, a patty and the onions. Serve with the potatoes and the corn. Bon appétit!
