1. Setup
Cut the tomatoes into small cubes. Chop the parsley, garlic and shallot. Zest the lemon. Cut the bacon into small pieces.
2. Cook the gnocchi
Bring a pot of water to a boil. Cook the gnocchi 3-4 minutes until they float to the surface. Drain.
3. Toast the panko
Heat a pan over medium high heat. Toast the panko 4-5 minutes until golden. Remove from the pan and mix with the lemon zest.
4. Cook the bacon
Add the bacon to the pan and cook 4-5 minutes until well done and crispy.
5. Add the tomatoes
Add the tomatoes, shallot and garlic. Cook 3-4 minutes. Add salt. Add the gnocchi, spinach and 1/4 of the Grana Padano. Mix 2 minutes.
6. Plate your dish
Serve the gnocchi and garnish with the parsley, lemon panko, some lemon juice to taste and the Grana Padano. Add pepper to taste. Bon appétit!
