Blackened Chicken

with Mashed Potatoes and Green Beans

1. Boil Potatoes Place potatoes in a medium pot, cover with salted water and bring to a boil. Once boiling, reduce heat to medium, cover and cook for 10–12 minutes, or until fork tender. Drain in a sieve and return to pot, set aside.
2. Prepare Ingredients Trim ends of green beans. Thinly slice green onion. Drain and pat dry chicken with paper towel. Place chicken in a medium bowl and toss with blackening spice. Season well with salt and pepper.
3. Cook Green Beans Heat 1/2 tbsp. olive oil in a large non-stick skillet over medium-high. Add green beans and cook 5–6 minutes, stirring occasionally, until lightly golden. Season with bean spice and the following to taste: red pepper flakes, salt and pepper. Add 3 tbsp. water and cook 1–2 minutes until water evaporates. Remove beans from skillet, divide between serving plates and cover with foil until ready to serve. Carefully wipe skillet clean with paper towel.
4. Cook Chicken Heat 1½ tbsp. olive oil in same skillet over medium-high. Add chicken to skillet and cook undisturbed for 2 minutes. Flip chicken and cook 2–3 minutes, until an internal temperature of 165°F is reached. Place chicken on a plate. Add wine-vinegar blend and 2 tbsp. water to skillet and cook for 1–2 minutes until reduced, using a wooden spoon to scrape off any browned bits. Remove from heat and stir in 1 tbsp. butter until smooth.
5. Finish Potatoes Add sour cream, green onion and 1 tbsp. butter to potatoes. Mash to desired consistency. Season to taste with salt and pepper.
6. Assemble and Serve Divide mashed potatoes between serving plates, beside green beans. Top potatoes with crumbled feta and chicken. Drizzle sauce from skillet over chicken. Enjoy!
