with caramelized onion, spicy mayonnaise and fries

1. Cook the potatoes Preheat the oven to 425°F. Cut the potatoes into large fries. Place on a baking sheet lined with baking paper. Add a drizzle of oil, salt and pepper. Bake in the oven for 23-26 minutes.
2. Setup Thinly slice the tomato and the onion.
3. Cook the onion Heat a drizzle of oil in a pan over medium-high heat. Cook the onion with the brown sugar and a pinch of salt for 3-4 minutes. Deglaze with 1-2 tbsp of red wine or cider vinegar. Cook 2-3 minutes. Remove from the pan.
4. Cook the patties Wipe out the pan. Add a drizzle of oil over medium high heat. Cook the patties for about 4 minutes on each side. It's a good time to explain to children that this cake is entirely vegetable. They will be impressed to learn that beet juice gives it its color.
5. Plate your dish Heat the buns to taste. Garnish with the mayonnaise, onions, lettuce, tomato slices and patty. Serve with fries and ketchup. Bon appétit!
