Beef and Feta Calzones

with spinach and cumin tomato sauce

1. Cook Filling Turn oven on to 425°F with a rack 6 inches from the top. Drain ground beef (or customized protein). Heat 1 tbsp. oil in a large non-stick skillet over medium-high. Once hot, add beef (or customized protein), onion and red pepper flakes to taste. Cook for 3–4 minutes, using a wooden spoon to break apart until golden and beef reaches an internal temperature of 165°F. Turn off heat, add one-third of the cumin tomato sauce and spinach, stirring continuously until wilted. Season to taste with salt and pepper.
2. Prepare Dough Brush a baking sheet with 1/2 tbsp. oil and a light layer of flour. Lightly sprinkle remaining flour on dry counter. Cut dough into four equal pieces. With a rolling pin, roll out each dough into circles, roughly 6 inches in diameter. Carefully transfer dough to baking sheet.
3. Prepare and Cook Calzones Divide filling and feta into centre of each dough, leaving a 1 inch border. Pull the far side of the dough towards you, folding in half. Tightly pinch around the edge to seal calzone into a half moon shape. Using 1 tbsp. oil, brush each calzone until evenly coated. Use the tip of a knife to gently slice a few 1 inch long slits in the top of each calzone. Transfer sheet to the centre rack of oven and bake for 12–15 minutes, until golden.
4. Finish Sauce To skillet from Step 1, add 1/4 cup water, remaining cumin tomato sauce. Bring to a low boil over medium, reduce heat to low and keep warm until ready to serve. Add 1 tbsp. of water at a time until desired consistency is reached. Pick and finely chop mint leaves. Stir mint into sauce and season to taste with salt and pepper.
5. Finish and Serve Divide calzones onto serving plates with sauce on the side. Enjoy!
