BBQ Chicken Breast
with BBQ spices and sauce served with a creamy tomato, romaine, croutons and dill salad

1. Cook the chicken
Pat the chicken dry. Coat the chicken with the BBQ spices and some pepper. Warm up a drizzle of oil in a pan over medium-high heat. Cook the chicken for 4-5 minutes on one side. Flip, cover and cook over low heat for 7-9 minutes or until the center of the chicken is fully cooked. Let it rest on a board for 3-4 minutes before slicing.
2. Setup
Tear the lettuce into pieces. Cut the tomatoes into quarters. Cut the bread into small croutons. Chop the dill.
3. Cook the croutons
Warm up a generous drizzle of oil in a pan over medium-high heat. Cook the croutons for 3-4 minutes or until colored. Add salt and pepper. Remove from the pan.
4. Make the sauce
Mix the mayonnaise with the dill, a generous drizzle of oil and 1 tsp. of balsamic vinegar. Add more oil for a finer dressing. Mix the sauce with the lettuce, the tomatoes and the croutons.
5. Plate your dish
Serve the chicken with the BBQ sauce and the salad. Bon appétit!
