Bang Bang Chicken

with Ginger Scallion Rice and Soy Yu Choy

1. Cook Rice Rinse and drain rice in a fine mesh sieve. Add rice and ginger to a small pot with 1¼ cups salted water and bring to a boil. Reduce heat to low and cover with a lid. Cook for 12–15 minutes, or until grains are tender.
2. Prepare Ingredients and Sauce Separate leaves from yu choy. Cut any large stems in half lengthwise. Thinly slice green onion. In a small bowl, combine sauce base and the following to taste spicy blend and salt.
3. Cook Yu Choy Heat 1 tbsp. oil in a large non-stick skillet over medium-high. Once hot, add stems and cook 3–4 minutes, or until tender. Reduce heat to medium-low, add leaves and soy blend and cook for 1 minute, or until leaves are wilted. Carefully wipe skillet with paper towel.
4. Prepare Chicken Drain chicken and pat dry with paper towel. Season well with salt and pepper. In a large bowl, combine egg whites and chicken. Add flour and cornstarch to chicken and toss to coat each piece of chicken thoroughly. Pour chicken into a fine mesh sieve and shake off excess flour.
5. Cook Chicken Heat 3 tbsp. oil in a large non-stick skillet over medium-high. Once hot, add chicken pieces one at a time. Cook for 4–6 minutes, turning as needed until golden brown on all sides and chicken has reached an internal temperature of 165°F.
6. Finish and Serve Once rice is cooked, add half of the green onions. Divide rice, yu choy and chicken between serving bowls. Drizzle chicken with bang bang sauce. Garnish everything with sesame seeds and remaining green onion. Enjoy!
