Balsamic Steak Ciabatta
with roasted vegetables, horseradish mayo and chipotle sweet potato fries

1. Setup
Preheat the oven to 425°F. Cut the sweet potatoes into fries. Thinly slice the zucchini. Slice the onion.
2. Cook the vegetables
Toss the sweet potatoes with the chipotle spices (to taste, spicy!), a drizzle of olive oil, salt and pepper. Place on a baking sheet lined with baking paper. Add the zucchini and onion. Garnish with a drizzle of oil, salt and pepper. Bake everything in the oven for 22-24 minutes.
3. Mix the mayonnaise
Mix the mayonnaise with the horseradish.
4. Cook the meat
Pat the meat dry. Add salt and pepper. Heat a drizzle of oil in a pan over medium high heat. Cook the strips for about 2 minutes on each side. Add 1-2 tbsp of balsamic vinegar, cook for 1 minute and remove the pan from the heat.
5. Plate your dish
Toast the bread 2-3 minutes in the oven. Garnish with some mayonnaise, the zucchini, onion, meat and arugula. Serve the sandwich with the fries and the rest of the mayonnaise. Bon appétit!
