1. Setup
Chop the spinach, the garlic and the artichokes.
2. Make the artichoke mixture
In a bowl, combine the artichokes, the spinach, the garlic and the mozzarella cheese. Season with salt and pepper.
3. Assemble and cook
Assemble the sandwiches and divide the artichoke mixture between the pita breads.
In a skillet over medium-high heat, add a knob of butter. Grill the pita 3-4 minutes per side.
4. Make the spicy honey
Place the honey in a bowl and put in the microwave for 20 seconds. Add the chili flakes, to taste (caution!spicy) and mix well.
5. Make the salad
In a bowl, mix the arugula, the parmesan shavings, a drizzle of olive oil and season with salt and pepper.
6. Plate your dish
Serve the grilled cheese with the salad and the **spicy honey*.
