Roughly chop the nuts. Slice the apples.
3. Make the crepe batter
In a bowl, mix together the flour, a pinch of salt, a pinch of cinnamon and eggs. Gradually whisk in the milk until smooth. Set aside. Gives about 4 large thin crepes.
4. Cook the apples
Melt a knob of butter in a pan over medium heat. Add the apples, the nuts, the brown sugar, one pack of maple syrup and a pinch of cinnamon. Cook until the apples are slightly caramelized. Add more butter if needed.
5. Plate your dish
Melt a knob of butter in a pan over medium-high. Pour a laddle of batter in the pan. Cook for 2 minutes on each side. Garnish with cheese and fold. Cook until the cheese is melted then remove from the pan. Garnish with caramelized apples and maple syrup. Bon appétit!
