Alfredo Chicken Meatball Sub

with a garlic and lemon broccoli salad

1. Setup Cut the broccoli into pieces. Zest the lemon. Chop the garlic.
2. Cook the meatballs Place the chicken in a bowl. Add salt and pepper. Make 3-4 small meatballs per person. Heat a drizzle of oil in a skillet over medium heat. Add the meatballs and cook 3-4 minutes, turning them a few times until every surface is browned. Remove from the skillet.
3. Make the sauce Add the cream, spices to taste and Parmesan to the skillet over low heat. Mix. Return the meatballs to the pan and bring to a boil. Reduce the heat to low, cover and simmer 4-5 minutes until the center is cooked through. Add a dash of lemon juice.
4. Cook the broccoli Meanwhile, heat another skillet over medium-high heat. Cook the almonds 3-4 minutes until browned. Remove from the skillet. Add a drizzle of oil and the broccoli and cook 3-4 minutes until browned. Add salt and pepper. Add the garlic, lemon zest and juice of half a lemon and cook for 1-2 minutes.
5. Plate your dish Heat the buns for a few seconds in the microwave. Garnish with the spinach, meatballs and sauce. Serve with the broccoli topped with almonds. Bon appétit!
