Winter is well and truly upon us, and with it: soup season!

Velvety, whipped or chunky, there’s nothing more comforting than a big bowl of hearty soup, in whatever form you choose… And it’s super easy to put together. All you have to do is prepare the base, add a vegetable of your choice and then the odd topping! There you have it: your bowl of wholesome goodness: ready to serve up.

We asked members of our Cook It team to share their favorite veg soup variations with you, as well as offering you our winning base recipe to fit any tasty soup of your choice, this winter.

Base recipe

What you’ll need:

½ white onion

½ potato, peeled and cut into cubes

1 clove garlic

1 tbsp butter

2 cups chicken or vegetable broth

½ cup 15% or 35% cream

2 cups spinach or 4 tomatoes or 1 small courgette or ½ large cauliflower  

  1. Melt the butter in a frying pan on medium-high heat.
  2. Add the onion and garlic and fry 2-3 minutes.
  3. Add the potato, the vegetable of your choice, the salt and pepper and mix 1-2 minutes.
  4. Add the broth and bring to boil.
  5. Reduce heat to low, cover and leave to simmer 15-20 minutes.
  6. Transfer to a mixing bowl with the cream, season again to taste until soup is smooth.

Our alternatives

Mexican-style cream of spinach soup – Judith’s favorite

Add half an avocado at stage 6 of the base recipe. Top with tortilla chips, sour cream, paprika and coriander.

Italian-style cream of tomato soup – Gabrielle’s favorite

Add a tablespoon of dried oregano at stage 2 of the base recipe. Add a handful of fresh basil at stage 3. Top with a dash of olive oil, basil and fresh oregano.




Thai-style cream of squash soup – Laurie-Anne’s favorite 

Add a tablespoon of ground ginger and another of curry powder at stage 2 of the base recipe. Substitute cream for coconut milk at stage 6. Top with coconut or roasted peanuts and coriander.

American-style cream of cauliflower soup – Amélie’s favorite 

Add a tablespoon of cream cheese at stage 6. Top with grated cheddar, bacon bits and fresh parsley.

Time to get creative!

Cream left as it is, whipped or crème fraîche – Dash of olive oil – Fresh herbs – Croûtons – Grated cheese – Hard-boiled egg – Roasted nuts – Fresh leaves – Fried vegetables – Tortilla or pita chips – Sliced or diced vegetables (radishes, tomatoes or cucumber) – Pesto, etc.
